The fermentation takes place at a controlled temperature in thermoconditioned steel tanks for 15-20 days, making the process of its kind more complex and significantly more valuable. This is followed by the spontaneous malolactic fermentation at the end of the alcoholic fermentation. Due to the large cuvée, the wine ages partly in wood and partly in steel tanks, all over 6 months. After this elaborate and complex process has taken place, a firework of emotions is created that is only reflected in the colors of the wine reflects. The intense ruby red with pronounced violet reflections gives off a powerful expectation that the wine not only keeps, but surpasses in the manner of the Di Sciascio claim. The bouquet is complex, persistent and characterized by powerful and Spicy notes of cocoa and coffee with mineral nuances as previously described. A hint of red and full cherries and blueberries can also be recognized in the bouquet. In terms of taste, fireworks on the palate can be expected because the wine is spicy thanks to its good structure, but still feels fresh and soft on the attack. The progression is articulated, matter-of-fact and resolute and crowns itself in a long finish. The spicy notes are liquorice and cocoa and make the wine very attractive for the start of an unforgettable evening.

LA STRADA DI CASA

The Indicazione Geografica Tipica (IGT), the birthplace of this grain of wine is the Tuscan coast. To be precise in Piombino in Val di Corina, Italy. A place in Italy where only the finest vines are harvested and every detail altered can create fireworks of change on the palate. Via Fonte is a beginning, a beginning for an evening, a beginning for a supper, a beginning for life. It is the source of the beginning, as well as the street where we, the Di Sciascio family, began to build a work of unyielding perfection. A street with a story, die Via Fonte.

 

The "via fonte"  is a cuvée made from the grape varieties: Carbenet Sauvignon, Sangiovese, Petit Verdot & Syrah. The act behind the complex wine is the cultivation of the grapes, which grow in an east-west direction so as to absorb an enamel of sun ripening. The nature of the soil is clayey, unique, very calcareous and therefore very nutrient-rich for the vines, which is reflected in the bouquet. The beauty, however, is the harvest, which takes place by hand and only in the month of September, when phenolic maturity is reached . Picking by hand gives the grapes a gentle nudge and encourages the minerals within to move. The vinification technique consists of the destemming and a gentle press and very brief press, which allows the maceration to preserve the minerals to later which   takes place at a low temperature,   to ensure the non-plus-ultra.
